Cheese is one of my favorite foods, and making cheese at home has become one of my favorite pastimes.

While some cheeses need to be aged for months before they are ready to eat, others are ready within a few hours or days. I think these fresh, un-aged cheeses are great ones to try if you're new to cheese making.

I'm glad feta is one of those cheeses that is ready to eat within a couple of days because it is one of my favorites. But if you don't gobble it up as quickly as I do, don't worry - feta can be stored for months if kept in brine.
