
For years now I've been buying bacon from a local farm because I know and trust the farmer, the animals are raised humanely on pasture or organic feed, and there are no added nasty colorings or nitrates. But that bacon wasn't cheap.
The same farmers offer fresh pork belly for sale, and I knew that that was the cut I needed to make my own bacon. I knew it was cheap because I'd ordered it in the past to make salt pork, which I use in chowders.
Fast forward: I'm eating my first taste of homemade bacon. So good! And really easy, too, provided that you have the patience to wait a couple of weeks.
I love that I can support my local farmers, save money, and choose my ingredients by doing this!
