What to Do with Root Veggies

By late winter, many of us are running out of ideas for the crops that have been "in season" since last fall. Even if you're buying them "fresh" from the farmers' market, some of those veg were actually harvested months ago and have been in storage since. Top of my what-else-can-I-do-with-this list are root vegetables.

I know it's a cliche to say, "Oh, you would love that if you just tried it in this recipe!" But sometimes it's true. I know confirmed beet detesters who came back for seconds of this beet salad refrigerator pickle recipe, and others with a deep disbelief that a rutabaga could be tasty who polished off a jar of these spicy rutabaga pickles.
