A freezer can save you time because it gives you ready to heat-and-serve food from already prepared soups to cleaned and prepped veg. But if those vegetables discolor and turn to mush when you defrost them - yuck! To prevent the brown goo factor, you need to blanch before you freeze some veggies.

But some vegetables do not need to be blanched before freezing. Here's how to freeze each vegetable.

A freezer can save you money because you A) don't let food spoil and have to throw it out, and B) you can quickly preserve ingredients from your market or CSA share - or what you grew yourself - while it is peak season cheap.
