Next to freezing blueberries, this is my favorite method for preserving this scrumptious fruit. It preserves the flavor of fresh blueberries beautifully, and has the advantage of being something you can store at room temperature (and not worry about if the power goes out).
This method is based on instructions that I first found in Putting Food By. My version respects the safety instructions in the original, but is slightly more convenient for the home cook working in small batches. It also works for those of you who are blessed with an abundance of blueberries.
